Garlic shrimp with apple and coastal flavor is a recipe taken from the northern coast of Honduras that combines local ingredients such as coconut milk, and non-local ingredients such as apple and ginger. Additionally we add slices of plantains as a complement.

Garlic Shrimp with apple and coastal flavor is a combination of textures between shrimp and apple. The flavors are between the salty shrimp, the sweetness of the apple with a bit of acid from the lemon and the nuances that the spices give to the dish.

The recipe takes a little elaboration but it is worth it with the resulting delicious flavor.

Garlic Shrimp with Apple Recipe

This recipe for Garlic Shrimp with Apple is a combination of textures between shrimp and apple combined with coconut milk.

Utensils

  • 1 Glass bowl
  • 1 medium saucepan or casserole
  • 1 Large casserole with lid
  • 2 knives
  • 1 Spoon
  • Measuring spoons
  • Chopping board

Ingredients

  • 1 pound of pre-cooked shrimp
  • 2 apples
  • 1/3 cup coconut milk
  • 12 cloves garlic
  • 2 green plantains
  • 1/2 white onion
  • 1 tablespoon shrimp or chicken broth
  • 1 teaspoon ginger
  • 1/2 teaspoon pepper
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon oregano
  • 1/2 teaspoon cumin
  • Parsley, preferably fresh
  • Lemon
  • Olive oil to fry the shrimp
  • Vegetable oil to fry the plantains

Preparation

Shrimp marinade

  1. First we are going to stir the following ingredients: bouillon, pepper, oregano, ginger, cumin and salt.
  2. In the glass bowl place the shrimp and add the spices and stir well with a ladle, then add the coconut milk.
  3. Marinate in a cool place or in the refrigerator for at least 30 minutes.
  4. Tip: The longer you let them marinate the better the flavor will be.

Frying the shrimp

  1. Peel and chop or crush the garlic.
  2. Chop the onion into julienne strips.
  3. Put the pan over medium high heat with the olive oil.
  4. First add the onion and sauté for 1 minute.
  5. Then add the garlic and sauté for an additional 1 minute.
  6. Add the shrimp without the marinade, stir and sauté for 1 minute.
  7. Cover the pan and lower the heat to low for 3 minutes to allow the flavors to integrate.
  8. Tip: If the shrimp is not pre-cooked, leave 2 more minutes.
  9. Then add the marinade, cover and leave for 3 more minutes.
  10. 1 minute before removing from the heat, add the parsley.
  11. Remove from heat and ready.

Frying the plantains

  1. Heat a medium saucepan or pot with vegetable oil over high heat and add the plantain slices to fry them.
  2. Once the shrimp are marinated, peel and slice the plantains in the shape of your preference.
  3. Tip: You can add a little salt to the plantains before frying.
  4. When they are to your liking, remove them from the pan and let them drain.

Preparing the shrimp with the apples

  1. Peel and cut the apples in julienne or squares according to your preference.
  2. Arrange the shrimp on a plate and add the banana slices with the apple pieces.
  3. Add a few drops of lemon juice.
  4. Note: This last step is important because it will give a unique flavor to the dish.
