How to prepare the best Honduran Torrejas

Equipment

  • 1 Blender
  • 2 large bowls
  • 1 griddle or Teflon saucepan
  • 2 Pots, one of them tall
  • Measuring spoons
  • Bread knife

Ingredients

  • 2 yolk bread rolls
  • 8 -10 eggs approximately
  • 500 gr Rapadura or sweet panela approximately (Sugar cane)
  • 5 Cloves
  • 5 Seeds of sweet pepper or allspice
  • 1.5 liters water
  • 1 teaspoon ginger (optional)
  • 1 teaspoon vanilla (optional)
  • Cinnamon chips to taste

Instructions

Honey Preparation

  1. Break and divide the Rapadura or sweet panela (Sugar cane) into smaller pieces and place them in one of the pots along with the water.
  2. In a molcajete, crush the cloves and allspice. Add them to the pot along with the cinnamon and ginger.
  3. Boil over high heat on the stove until it comes to a boil, until the pieces of Rapadura or panela de dulce are dissolved and the other ingredients are integrated.
  4. 1 minute before turning off the stove, add the vanilla.
  5. Once the sweet syrup is formed, you can remove it from the stove.
  6. Filter the syrup so that it does not contain the remains of the sweet or other ingredients and set aside.

Bread Preparation

  1. Cut the bolillos into slightly thin slices (2 cm).
  2. Separate the whites from the yolks, reserve the yolks. Beat the egg whites in the mixer until stiff, then add the yolks and beat them with the egg whites.
  3. Pass the slices of bread through the beaten eggs so that it forms a kind of layer around the bread
  4. Put them on a hot griddle or Teflon saucepan and turn them on all sides, so that the egg layer integrates well with the bread.
  5. Once ready we reserve.

Final preparation

  1. Place the bread slices in order in a tall pot
  2. Pour the syrup until the towers are covered.
  3. Boil over high heat until it reaches a boil, then lower to a simmer for 20 minutes.
  4. Once the syrup is integrated into the torrejas, it is ready to serve.

Notes

  • Tip 1: The eggs must be at room temperature for the white to rise.
  • Tip 2: Beat a small amount of eggs (4 maximum), it will give you more by preventing it from going down too quickly.
  • Tip 3: Do not fry the torrejas with oil, it is not necessary, and you will avoid the work of washing them and spending more on oil.
  • Tip 4: If you want them to be sweeter you can add more sweet rapadura to the syrup
  • Tip 5: You can crush the cloves and allspice in a mortar to make the most of their qualities.
